The normal difficulty level seems excessive. The easy level should be normal and there should be another level below it. The character stress levels made me stressed as hell. No thanks.

I don't know why it's the first option offered to new players, but it's the most dangerous class especially if you're not familiar with citizen sleeper and/or it's your first playthrought of the second game.
