That's In Domine and Divine Wind. Playing this game modded is surprisingly only a step back from EU4 in terms of QOL and graphics (graphics aren't an eyesore though). To tell a funny anecdote, one time I played the Inca and 1492 came by, and I was like "oh ♥♥♥♥, well I guess it's game over soon", and then there were no colonies by 1510... 1520... 1530 ok something's going on a year later France colonises the coast, within a year declares war on me and I get killed, I look at France and see it has eaten all of Europe.

There are a couple of different ways to go about it, but ultimately you need a strong economy so you can afford colonisers and and army. That's about it. There's not much in the game play in managing politic, society building, culture or religion and they are all quite limited in scope regardless of which part of the world you start in.
