After struggling through the tutorial for 40 minutes (and having to twice check someone's playthrough video on youtube when I got stuck) I just gave up. I feel like I didn't even get that far in the tutorial as I was struggling too much. Too confusing, too complicated, just not enjoyable for me. Sadly I requested a refund.

You have to click and HOLD the item then drag it ACROSS the deposit bin then scan it and bring it BACK to the bin you just passed over. However, I do know that it was really cool to have to put together a spreadsheet to match all the fish in the tank that best suits them. I liked that it didn't automatically tell you, "this fish is not suitable," and you had to figure it out by the tank rating dropping and the fish getting sick. I loved that this game made you use your brain instead of just automatically move through the functions.
